Bring summer flavour to your entrées with this delicious and smooth combination of tuna and avocado. A fruit goes perfectly with a summer dish, even for a light lunch. Avocado is a creamy and nutritive fruit that goes well in many recipes, but this one is so unique that will be a famous entree!
Yields: Makes 2 Servings
Ingredients:
1 avocado Zest and juice of 1 lemon1 tsp Extra Virgin Olive Oil
6 oz albacore tuna in water, well-drained
1 tbsp sunflower seeds
Salt and freshly ground black pepper, to taste
Fresh basil leaves, for garnish
Method of Preparation Avocado and Tuna Snack:
1. To start with, halve the avocado lengthwise and remove the pit.
2. Scoop out 2 tbsp of avocado flesh from each half and reserve the shells.
3. Combine the avocado flesh with olive oil and lemon juice until is creamy.
4. Toss with tuna, half of the lemon zest, sunflower seeds and salt and pepper to taste.
5. To finish, fill in the halves with tuna mixture and garnish with remaining lemon zest and basil.
6. Serve immediately with a spoon.
