Tuna Empanadas Recipe - bhaarat recipe

This delicious snack is a gift from Spain to the world. They are very easy to make, if you buy a pre-made pastry, you only have to worry about the filling. This tuna filling is a healthier choice and along with lemon juice and chopped green olives, will make it a delicious snack for your guests on a summer evening!



Yields: Makes 24 Units

Ingredients:

2 large Eggs

5 oz tuna in oil, well-drained

1 tbsp Extra Virgin Olive Oil

½ small yellow onion, chopped

2 Garlic clove, minced

¼ tsp smoked Paprika

¼ tsp Salt

⅛ tsp crushed Red Pepper

5 oz Spinach, chopped

¼ cup pitted Green Olives, chopped

1 tsp Lemon juice

17.5 oz box of frozen puff pastry, thawed

1 tsp Water

Method of Preparation Tuna Empanadas :

1. To start with, bring 1 egg to boil in a pot for around 12 minutes, then run under cold water, peel and chop.

2. preheat oven to 325ºF.

3. Warm oil in a skillet over medium-high heat and sauté the onion for 4 minutes.

4. Add paprika, salt, pepper and garlic and sauté for 1 minute.

5. add spinach to skillet, increase heat to high and sauté 5 minutes, stirring.

6. Transfer the mixture to a bowl and let cool.

7. Add in tuna, chopped egg, lemon juice and olives and stir.

8. Line the two baking sheets with parchment paper.

9. Flour a surface to roll the pastry sheet.

10. Open the pastry to the ⅛-inch thickness and cut out 12 3-inch rounds.

11. Repeat the same process with the second pastry sheet, making 24 rounds of pastry.

12. Place ½ tablespoon of filling in the centre of each round.

13. Fold pastry over the filling and press and crimp edges.

14. Do the same process with the remaining round and transfer to baking sheets.

15. Beat the remaining egg with the water.

16. Brush each empanada with the egg wash.

17. Bake for 35 minutes, transfer to a rack and let cool for 10 minutes.
