Yields: Makes 4 Servings 

Ingredients:


2 cups Buttermilk Cornbread mix

10 oz herb and garlic flavoured light Tuna chunks

⅔ Cup milk

2 tbsp Mayonnaise

3 green onions, finely sliced

3 large eggs, lightly beaten

2 tbsp fresh parsley, chopped

1 tsp Old Bay seasoning

1 tsp Worcestershire Sauce

3 tbsp Butter

3 tbsp Vegetable Oil

Method of Preparation Tuna Cornbread cakes :


1. First, preheat the oven to 425°.

2. Next, blend together cornbread mix and ⅔ cup milk.

3. pour batter into a lightly greased 8-inch square pan.

4. Bake at 425° for 15 minutes or until golden brown.

5. Let it cool for a while, until it's warm.

6. In a large bowl, stir together mayonnaise, onions, eggs, parsley, Old Bay seasoning and Worcestershire sauce.

7. Add the cornbread mix and tuna chunks to the mayonnaise mixture
and blend well.

8. Shape the mixture into patties (around 3 inches).

9. Melt the butter in a large skillet over medium heat and add the vegetable oil when it's melted.

10. Cook tuna patties for 2-3 minutes on each side.

11. Drain in paper towels and serve with your favorite dipping sauce.
